How could a single fish, valued at just $12.00 on the market, be worth $4,700? The answer lies in Iceland’s innovative 100% fish utilization project, a model that’s reshaping the seafood industry by ensuring no part of the fish goes to waste. This innovative approach transforms what was once considered “leftover” or “byproduct” into high-value goods — not just for food, but for cosmetics, supplements, pharmaceuticals, and more.

By leveraging cutting-edge technology and collaborative business models, Icelandic companies are leading the way in innovative seafood utilization. They extract collagen from fish skin for anti-aging creams, use enzymes from fish intestines for medical applications, and create protein powders and omega-rich supplements from fish bones and trimmings. These efforts increase the economic value of each fish, and contribute to a more sustainable and circular economy.

This vision recently made its way to the Oregon Coast when Alexandra Leeper, PhD, CEO of the Iceland Ocean Cluster, visited to share her expertise. Over the course of four in-person workshops and one online info session, Dr. Leeper introduced local stakeholders to the Icelandic model, sparking conversations about what’s possible for Oregon’s seafood industry. The sessions reached representatives from more than 90 organizations, and it’s clear the excitement is building as local seafood leaders, innovators, and policymakers explore ways to adapt the Icelandic model to our unique regional needs.

Like Iceland, seafood is a cornerstone of the Oregon Coast’s economy, but challenges remain. Currently, 90% of the seafood harvested here is exported. By looking towards the principles of 100% utilization, we have the opportunity to retain more economic benefits locally, while also reducing waste.

Iceland took a $12.00 fish and created $4,700 worth of value. We are inspired to follow their lead, and through the passion and collaboration of our partners, the Oregon Coast can rise as a global leader in sustainable seafood innovation.
