Hands-on Oregon Autumn Harvest Class

Cook alongside Pacific Northwest chefs the bounty of the Autumn harvest. Our chefs will guide you through hands-on preparations featuring local autumn harvest. A mushroom expert will guide us through the local varieties and tour us through their environment. Learn about fishing from a commercial fisherman; explore with naturalists the forests and estuaries that provide shellfish, mushrooms, berries, herbs and other wild edibles. We’ll visit a Coastal Range farm and discover the challenges and rewards of sustainable farming. And we’ll explore the culinary traditions of the Native Americans of the Pacific Northwest.
